Chicken Pesto Pasta

Quick and easy food is always good when you’re in a rush or just can’t be bothered slaving over a hot stove!

This recipe is ideal for pesto lovers who have been avoiding the only delight in an attempt at being healthy.

Serves:2 (SW members- This has no Syns if using Parmesan as a HEA choice)

Prep: 5 mins

Cook: 15 mins

Ingredients: 25g Fresh Basil, 200g Dried Pasta, 50g Low Fat Fromage Frais, Half a Red Chilli (deseeded), two chicken breast, 2 cloves of garlic, 50ml of Vegetable Stock, 30g Parmesan Cheese.

Chicken Pesto Pasta

Directions:

Add Pasta to a pan of Boiling water, I used Penne but any will do, Stick two diced seasoned chicken breast under the grill.

Put Basil, Fromage Frais, Chilli, Garlic, 90% of the Parmesan & stock in a Mini chopper and blast for 15 seconds.

Keep and eye on your chicken and pasta stirring/turning when needed, once both cooked (chicken juices run clear when poked and Pasta should be paler than when it was dry and soft to touch) drain pasta and put back in original pan to keep warm, sling in the cooked chicken and pour in your delicious pesto sauce, return to heat and warm for 1 min and serve!
